Choe Mama - Making Kimchi Good!


Welcome to Choe Mama Brands!

My wife and I love to eat and enjoy the many different and diverse cuisines out there, Asian foods being one of our favorites. Since my wife is Korean, needless to say kimchi has been in her life right from day one and for me, since I met my wife over 15 years ago.

Upon perusing the web one day, I saw that there was an upcoming kimchi festival right here in Boston, well... West Roxbury. I couldn't believe my eyes - A kimchi festival? Here? in New England? I never thought there were many people into kimchi in Boston. This would seem more appropriate in Flushing, New York, or 'Korean Town' in Los Angeles, but this festival was to take place literally just down the way from us.

After my wife repeatedly rejected my notion of entering her fabulous kimchi to be judged in a competition, she finally agreed several days later to do this. This was good.

And so here we are, busily making those huge batches of kimchi, some destined to be 'young' or 'new' kimchi, hence 'Little Tiger Style,' and my wife's favorite, the older, more mature kimchi with the big powerful taste, I call 'Big Thunder Style.' For a little bit of fun, we're also making another delicious type of kimchi called, 'Oisobaegi Kimchi,' which is a split cucumber filled with greens and seasonings.
